The following are last week’s Luzerne County restaurant inspection reports from the Pennsylvania Department of Agriculture.

According to the agency: “any inspection is a ‘snapshot’ of the day and time of the inspection. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment. Also, at the time of the inspection, violations are recorded but are often corrected on site prior to the inspector leaving the establishment.”

Violations: Small hood system located over 2 fryers and griddle is not adequately sized to accommodate equipment. Equipment falls outside of hood perimeters. No thermometer visible in Arctic Air freezer. Fan guard in 3 door cooler has build up of static dust.

Palace Bar & Grill, 49 N. Wyoming St., Hazleton, June 24. Follow-up inspection; in compliance; no violations.

Metro Bar & Grill, 1174 Memorial Highway, Dallas, June 24. Regular inspection; out of compliance. Violations: Working spray containers in prep area, used for storing “air freshener for the dumpster area” taken from bulk supplies, were not marked with the common name of the chemical. The bottles were labeled during this inspection. The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The food facility does not have the original certificate for the certified food employee posted in public view. This was corrected during this inspection. A 1/2 quart of Half/Half was held at 46 °F, in the single door reach-in refrigerator in the prep area, rather than 41°F or below as required. The temperature on the refrigerator was adjusted and the ambient temperature was holding 35 degrees F. The Half and Half was voluntarily discarded. Hamburgers and steaks, undercooked to the customer’s request; however, a written consumer advisory (on the menu, table tent, or placard) is not provided to the consumer. This was corrected during this inspection. Old Menus were removed and discarded and new paper menus were printed with a consumer advisory. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in single door reach-in refrigerator in the prep area. A thermometer was placed during this inspection. One side of the fan guard inside the single door reach-in refrigerator in the walk-in cooler was loose and hanging down. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was less than 50 ppm, and not 50-100 ppm as required. The facility called in a repairman and the chemical sanitizer residual is 50 ppm in the final rinse cycle. Observed a build up of pink slime on the drip edge inside of the ice machine. The ice machine was emptied, cleaned and sanitized during this inspection. Observed dried food residue on all inside surfaces of the microwave oven in the food prep area. The microwave was cleaned and sanitized during this inspection. The blade of the post can opener blade, a food contact surface, was observed to have dried black residue and was not clean to sight and touch. The post can opener was cleaned and sanitized during this inspection. The deli slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch. In an interview with the Kitchen Manager he stated that he did not know when the slicer was last used. The deli slicer was cleaned and sanitized during this inspection. Observed a build up of static dust on the fan guard in the single door reach in refrigerator in the prep area. The handwash sink located in the bar area does not have water at a temperature of at least 100°F. The water temperature was 76 degrees F. The PIC made an adjustment to the water heater during this inspection and water temperature was holding at 115 degrees F. No sign or poster posted at the handwash sink in the ladies restroom to remind food employees to wash their hands. A sign was posted during this inspection.

Lenny’s L.A. Cafe, 594 N. Alter St., Hazleton, June 24. Regular inspection; in compliance; no violations.

Kentucky Fried Chicken, 650 E. Broad St., Hazleton, June 24. Regular inspection; in compliance. Violation: Ware wash sink has buik up of mineral deposits in basins.

Grateful Gourmet, 125 Winfield Village Road, Sugarloaf, June 24. Regular inspection; in compliance. Violations: No proof of food handler certification available at time of inspection. Proof of certification or enrollment in a certification class required within 10 days. Single door bain marie door is not properly adjusted and is exhibiting gap along aealin surfaces.

EZ Express Mart, 3251 State Highway 118, Dallas, June 24. Regular inspection; in compliance. Violations: Commercially processed ready to eat food (deli Meats and cheeses), located in the deli case, and held more than 24 hours, is not being marked with the date it was opened. This items were labeled dated marked during this inspection. Observed a dried Brown residue in the base of all 3 bays of the 3 bay sink. The sinks were cleaned and sanitized during this inspection.

Damon’s # 200, 120 State Route 93, Hazle Township, June 24. Regular inspection; in compliance. Violations: Food contact surfaces of slicer blade are deteriorated. A new blade should be considered. Floor tiles missing underneath fryers. Wall covering underneath dish machine entry ramp is exhibiting open holes. Florescent lite tubes in walk in cooler are not shielded. Fan guards in walk in cooler have build up of static dust.

Convenient Food Mart #3022, 366 Wyoming Ave., Kingston, June 24. Regular inspection; in compliance. Violations: No sign or poster posted at the handwash sink in the employee restroom to remind food employees to wash their hands. A sign was posted during this inspection. Paper towel dispenser empty at the handwash sink in the employee restroom area. Paper towel placed during this inspection.

Cafe Europa, 65 Laurel Mall, Hazleton, June 24. Regular inspection; in compliance. Violations: Handle on in use cleaver is duct taped. Fan guard housing in walk in cooler has buil up of static dust / mold.

Beaumont Inn, 4437 State Route 309, Dallas, June 24. Regular inspection; in compliance. Violations: The blade of the post can opener, and deli meat slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch. The PIC stated that the deli slicer was last used on 6/23/15. Both the post can opener and deli slicer were cleaned and santitized during this inspection. No sign or poster posted at the handwash sink in the “Server Alley and Bar areas to remind food employees to wash their hands. Signs were posted during this inspection.

Observed deeply scored cutting boards not resurfaced or discarded as required. Knives, observed with dried food residuals on food contact surface stored in clean knife racks. Buildup of static dust on fan guards in dessert and prepared foods coolers. Dark/ old food buildup from hands on surfaces of walk-in cooler and hot holding unit doors. Buildup of dropped food on floors under cooking equipment and warewash area of the food facility, and in need of cleaning.This was in the process of being corrected at the time of this inspection. Dark mold-like buildup forming on wall under mechanical dishwasher. Hood filters have buildup of grease and are due for cleaning. Observed several fruit or drain flies in the ware wash area.

Kelsey’s Corner, 1 N. Main St., Ashley, June 25. Regular inspection; in compliance. Violations: Food facility has an employee who held a Certified Food Manager certificate; however, the certificate has expired and is no longer valid. The facility had an employee who just took a 3 year food handler course and not the 5 year Food Employee Certification Course. The owner will register and pay for an employee to take the 5 year course with in 10 days. The person will obtain the 5 year certificate within 90 days. The owner will fax to the region 3 field office or e-mail proof of registration and payment for the course within 10 days. He will then do the same with the Certificate once received. Commercially processed ready to eat food (Deli ham), located in the walk-in cooler, and held more than 24 hours, is not being marked with the date it was opened. The Owner stated it was sliced yesterday. The ham was date marked during this inspection. Observed a small amount of pink slime on the drip edge, a food contact surface, inside the ice machine. The ice machine was cleaned and sanitized during this inspection. Observed a tan mold like substance on the ceiling and walls of the the walk in keg cooler.

Groceries Plus, 1003 N. Vine St., Hazleton, June 25. Change of owner inspection; in compliance. Violations: Deli sandwiches in self serve case are not labeled / no ingredient information at point of purchase.—Plastic cutting board on bain marie has deep cutting grooves on food contact surfaces. Florescent lite tube display cooler is not shielded. Fan guards in walk in cooler have build up of static dust. Floor in restroom has build up of grime.
