With the temperatures soaring this week, we are all looking for ways to cool down. Eating spicy foods can actually cool you down a bit. In warm-weather climates such as Mexico and India, people eat foods full of hot peppers and spices that raise their internal temperature, making them sweat and actually cooling them down.

This spicy Italian clam dish should help cool you down this week. It’s one of our most popular offerings during our monthly Clam Weeks at Cork. Fra Diavolo is Italian for Brother Devil. It’s the name given to a spicy tomato sauce seasoned with hot red pepper that is usually served with seafood and pasta. You can enjoy this clam dish on its own, or for a heartier meal, serve it over linguini with some crusty Italian bread for dipping.

CLAMS FRA DIAVOLO

3 dozen clams

3 tablespoons extra virgin olive oil

4 cloves garlic, peeled and chopped

1 tablespoon fresh parsley, chopped

1 tablespoon fresh oregano

2 teaspoons crushed red pepper (adjust to your taste)

1 1/2- 2 cups tomato sauce (we use our homemade, but you can substitute canned crushed plum tomatoes)

1 tablespoon butter

1/2-3/4 cup white wine

Heat extra virgin olive oil in a sauté pan. Add chopped garlic and sauté a bit. Throw in the crushed red pepper, fresh oregano, fresh parsley, white white and tomato sauce. Bring to a boil and stir in the clams. Cover and cook until the clams open. When the clams open, stir in the pat of butter. Serve with crusty Italian bread. If you want to serve over pasta, you can increase the amount of sauce you are making. Enjoy!
